Gamja-ongsimi
감자옹심이
Potato dumpling soup
Small, chewy balls of grated potato in a light anchovy broth, a Gangwon-do specialty. It's a kind of sujebi made with potato instead of wheat dough.
What it is
- Potatoes are grated and squeezed, then mixed with the starch that settles out of the squeezed liquid. The dough is rolled into small balls.
- They're boiled in anchovy and kelp broth with zucchini and other vegetables, and usually topped with seaweed flakes and toasted sesame.
- Ongsimi-kalguksu has noodles in the same bowl. Some places also make it in a thick perilla-seed broth.
How to eat it
- 1Eat the dumplings and broth with a spoon. They're filling, so one bowl is a full meal. Kimchi on the side helps.
History
- Ongsimi is Gangwon dialect for saealsim, "bird's eggs", after the small round shape. Today many shops make bigger, flatter pieces, closer to sujebi.
