Milmyeon
밀면
Busan cold wheat noodles
Busan's cold noodle: chewy wheat noodles in an icy broth or a spicy sauce. It's a wartime cousin of naengmyeon, made with the flour refugees could get.
What it is
- The noodles are usually made from wheat flour mixed with sweet potato or potato starch, which makes them chewy and elastic.
- Mul-milmyeon comes in cold broth; bibim-milmyeon is mixed with a spicy sauce. The broth recipe varies from shop to shop.
How to eat it
- 1Add vinegar and mustard from the table to taste. Staff can cut the noodles with scissors if you ask.
- 2Many shops serve warm broth on the side, and big dumplings are the usual partner.
History
- It began during the Korean War. Refugees from the North missed naengmyeon, but buckwheat was scarce in Busan, so they made noodles from wheat flour that came with American food aid. Sources differ on the details.
- Naeho Naengmyeon, reopened in Busan in 1953 by a refugee family, is widely credited as the birthplace.
Allergies and diet
Usually contains
- The broth is usually made with meat, and recipes vary by shop.
- Bowls are often topped with sliced meat and half a boiled egg.
Recipes differ between restaurants. If you have an allergy, always ask the staff before you order.
