Jokbal and bossam
족발·보쌈
Braised pig's trotters and boiled pork wraps
Korea's two great boiled pork plates. Jokbal is pig's trotters braised in soy sauce; bossam is plain boiled pork belly or shoulder. Both are sliced, wrapped in lettuce and shared.
What it is
- Jokbal is cooked in a soy-based broth with green onions, garlic, ginger and rice wine, then sliced. Expect soft, gelatin-rich meat with the skin on.
- Bossam is boiled more simply and comes with radish or cabbage kimchi.
- Both are usually served warm or at room temperature with salted shrimp, ssamjang and lettuce, and are common with drinks.
How to eat it
- 1Take a lettuce leaf, add a slice of meat and a little sauce or salted shrimp, fold it and eat it in one bite.
- 2Portions are for sharing, so these dishes suit two or more people.
History
- Seoul's best-known jokbal street is in Jangchung-dong, near Dongguk University Station.
